Vegan Ramen

It has been rainy these past few days. Rainy days means its time to eat some ramen!

In this recipe, I used normal Japanese cooking ingredients. I used Konbu (Sea Cabbage) and Dried Shiitake mushrooms. Both are a natural flavor enhancer for its great taste of umami.

I know some people might not a fond of Shiitake because of its strong and intense smell. But personally I love its unique flavor.

After getting its umami, adding soy sauce and ginger will be perfect for balancing the flavor. You can also adjust it according to your preference like lessen the amount of soy sauce and adding miso paste (Soy bean paste) in it to make a miso ramen instead ✨

I wanted to make a scallop and fish imitations using mushrooms so I tried it using king oyster mushrooms. Marinated it with ginger, Japanese rice wine, mirin and soy sauce. Surprisingly it was amazing! Its taste and texture was perfect. I should have added a little bit of sugar on it add some sweetness but it’s alright! Will try it again next time!

If you can’t find konbu and dried shiitake mushrooms in your local supermarkets, you can order here! Its a bit pricey but you can use it in other recipes too! ✨
