Today, we are going to share you our restaurant recipe of Vegan Tantanmen. In this recipe, instead of using white sesame seeds, we used black sesame seeds for the base of our soup. ✨ You can enjoy this Tantanmen either cold or hot! Hope you’ll like it!
Recipe for Tantanmen “Ragu” :(2-4 servings)
Ingredients:
Dried Shiitake- 1pc ( Soak in 100ml of water) Cut into small dices
Ginger- 20g ( Minced)
Garlic- 20g (Minced)
Bamboo shoot-
Soy meat- 40g ( Boil for 3-5Minutes, squeeze out excess water)
Tenmenjan- 35g
Doubanjiang- 2g
Szechuan pepper- a pinch or two
Salt and pepper- to taste
Recipe for soup: Blend everything
Ground black sesame seeds- 30g
Pink salt- 5g
Beet Sugar- 16g
Miso paste- 6g
Soy sauce- 16ml
Soy milk- 400ml
Noodle: Any Vegan noodle of your choice. We used Hiyamugi Noodles
Toppings: Kikurage/wood ear mushrooms, fresh red onion slices, kaiware sprouts, dried chili strips, chopped peanuts and chili oil. 😊
