Hello Vegans!✨
It’s been almost two weeks since our last post. We’ve been very busy lately experimenting new recipes🕊
This recipe has been one of the most challenging we’ve made so far. We really wanted to have an original doughnuts recipe so we’ve done countless of trial and errors. But today, we are happy to share with you guys the outcome of that hard work! ✨😭
So here are the recipes✨
Apple and Cinnamon Jam
- Ripe Apple- 2 pieces
- Sugar- Equal the weight of the apple
- Vanilla beans-half
- Cinnamon stick-1/4
- Lemon juice
Procedure:
- Peel the apple and cut into cubes
- In a saucepan, put the ingredients except the lemon juice
- Cook in low heat, stir from time to time to avoid burning
- Cook until the apple softens
- Lastly, add some drops of lemon juice
- Cool down and keep refrigerated
(Pon de Ring Doughnuts – MAKES 10-12 RINGS ) Ingredients:
- Warm soy milk- 200ml
- Dry yeast- 10g
- Glutinous rice flour/Shiratamako- 60g
- Rice flour- 140g
- Cake flour- 80g
- Sugar- 50g
Procedure:
- Combine the warm soy milk and dry yeast. Set aside in a warm place to activate the yeast
- In a bowl, put the Shiratamako/glutinous rice flour and pour the soy milk mixture. Dissolve completely using a spatula.
- Add the the rest of the ingredients and and knead. It may be really sticky because of the rice and glutinous flour but don’t worry, once you roll it into a ball, it will form nicely.
- Heat a vegetable oil at 150degrees celsius. It is very important to check the temperature to avoid burning, and your doughnuts will be raw on the inside.
- Roll the dough into a balls and form a ring shape. 8pieces of balls for each ring and 6grams for each balls
- Deep fry the doughnuts. At first, it will sink. Once it started to float, remove the wax paper and continuously cook until the color is even.
- Put on a rack to remove excess oils and that’s it!

Original Doughnuts Recipe ( Can make around 20pieces of doughnuts)
Ingredients:
- Warm Soy Milk-210ml
- Coconut oil- 24ml
- Dry yeast- 5g
- Bread flour- 300g
- Salt-pinch
- Sugar- 110g
Procedure:
- Combine the coconut oil, soy milk and dry yeast and set aside for 5 minutes
- In a large bowl, sift the bread flour and combine the rest of the ingredients.
- Knead the dough for about 5-10 minutes
- Put in a greased bowl and rest for about 30-40 minutes in a warm place until doubled in size
- After 30-40 minutes, knead again and using a rolling pin, flatten the dough and cut the dough using a doughnut cutter or you can also use a small cup.
- Put in a tray, cover and proof for 30 minutes.
- Deep fry at 150 degrees celsius.
Time for Decorations!
For flavoring and decorations, I just came up with some random ideas that can be made easily at home. Mostly my favorites! ⭐️
Choco-Banana Flambe
Made some banana flambe using two tbsp of sugar and one tsp of coconut oil, one piece of banana and two tbsp of brandy. Drizzle some melted vegan chocolates, pure cocoa powder and a dried banana chips.✨
Lotus and Pistachio
Simple and easy! Just spread some lotus spread, sprinkle some chopped pistachio and pink salt. And of course, one whole Lotus biscuit! ✨
Chocolate and Peanut Butter
Cut the doughnut in half and deep the top in melted chocolate. Spread some peanut butter of your choice and finish with some chopped roasted peanuts! ✨
Apple and Cinnamon
For this, I just sliced the doughnut in half and spread a home made apple and cinnamon jam. Sprinkle some cinnamon sugar and powder sugar, roasted walnuts and raisins on top.✨
Coconut and Mango
Cut the doughnut into half . For the filling, Cut some fresh mangoes into small dices and add some maple syrup and coconut cream. Put the filling. Using the remaining syrup from the mango, dip the doughnut and dip into coconut flakes. Add some mango roses on top for decoration✨
Mixed Berries
Since the berries season here in Japan is over, I used frozen mixed berries since I can’t find any fresh berries in the supermarket. Just blend the berries with some vegan yoghurt and maple syrup. Add some agar and dissolve. Make sure to double dip for a nice coating. I still recommend to use fresh berries if it’s available in your supermarkets.
Matcha and Raspberry
Just deep the Pon de Ring into a matcha glaze, 30g of matcha powder, 30g of powder sugar and hot water. Dissolve completely.
Added some dried raspberries on top!✨
Azuki and Matcha
Put an azuki filling and deep the doughnut into matcha glaze. Sprinkle some soy powder/ kinako powder to finish. For the full recipe, check out our previous blog about how to cook an azuki beans for beginners!✨
Chocolate and Matcha
Just dip the pon de ring in a melted vegan chocolate, sprinkle some matcha powder and chopped roasted peanuts on top! ✨
Finally, we are done! One more thing! ✨ I made a VegaNice doughnut box! I want to surprise my cameraman with this! I just cut out some green paper for our logo and bought this box from DAISO! ⭐️ (Dollar Shop)
