Japanese Mustard Spinach and Matcha Cake

Hello!

This is the first dessert recipe of VegaNice Japan and of course, we would like to use our local ingredients in making vegan desserts✨

All of you knows that Japan is extremely famous for matcha/ green tea. That’s why I want to share with you guys some healthy vegan snack made from matcha with a bit of kick flavor from Japanese mustard spinach. 🌱

Japanese mustard spinach has some peppery taste, quite similar to Chinese white cabbage. If its not available in your country or area, you still use any available spinach.

This recipe is very easy! All you need to do is to combine everything and bake in the oven!

Ingredients

Crumble:
Whole wheat flour- 20g
Cake flour( You can use all-purpose flour)-20g
Almond powder-20g
Beet sugar/ Tensai in Japanese (You can use brown sugar too)-20g
Vegetable oil-  2Tbsp

Instructions
Just combine everything in a bowl, keep in the fridge while making the batter

Cake batter:
A: 
Whole wheat flour- 50g
Cake flour- 150g
Baking powder- 2tsp
Almond powder- 60g
Beet sugar(or brown sugar) - 30g
Matcha powder- 2tsp
B: 
Maple syrup- 90ml
Japanese mustard spinach - 100g
Soy milk- 200ml
Vegetable oil- 30ml 

Instructions:
1.)Pre-heat oven at 180 degrees celsius
2.) For the dry ingredients, make sure to sift everything except for the whole wheat flour. Put in a large bowl
3.) Roughly chop the spinach. Make sure to wash is first before using
4.) In a blender or mixer, blend everything together and combine with the dry ingredients
5.) Make sure not to over mix!
6.) Put the batter into a square baking tray. For this recipe, I used a 23x21cm baking tray
7.) Put the crumble on top, and sprinkle the sesame seeds
8.) Bake in the oven at 180degrees celsius for 30-40minutes
9.) Cool down for 30minutes before slicing
