Thank you, and have a VegaNice Bento making! ✨

This bento ideas are my freestyle cooking. We don’t usually measure when we cook bentos. I also use some leftover ingredients or what’s inside our fridge first. Just enjoy the process! 😊💚 there are no rules in making your bento! 🕊

Bento no. 1 ( Simple Onigiri/ riceball bento)

Riceball

I just used white rice and season with some yukari powder. ( Perilla leaves seasoning) This is one of my favorite furikake. And for the filling is chopped pickled plum.

Sauteed julienne of carrots

I seasoned with soy sauce, mirin and sake. I also added sesame oil , sesame seeds and shio konbu to add some umami.

On side was boiled fresh broccoli, fresh salad greens and some cherry tomatoes.

Bento no. 2 ( Burger Bento)

Burger Patty

We actually have a video about our vegan burger patty, but in this video, I didn’t measure them. And only used simple ingredients. Because it’s morning. 😅 I feel so sleepy and tired to measure. Luckily I made it perfectly fine. 😋 I just mixed some boiled soy meat and firm tofu and season it with salt and pepper 💚 And for the sauce, canned mushroom slices, uster sauce and tomato ketchup and that’s it!

On side are some green string beans and some corns season with salt and pepper, cherry tomatoes , fried potato wedges and boiled pasta with yukari powder ✨

Bento no. 3 ( Tofu Rice)

I named it Tofu rice because its kinda tofu version of omu rice. It’s normally a rice wrapped with egg.

For the rice

I used leftover vegetables from our fridge. A zucchini, red paprika/ red bell peppers, white onion, king oyster mushroom. First, saute the vegetables. Season with salt and pepper. Add a bit of soy sauce and add the cooked white rice. Add some Tomato ketchup. Wrap the rice with Fried tofu/ or Age Tofu.

On the side

Are just boiled broccoli, steamed corns, green lettuce and cherry tomatoes. That’s It!✨

Bento no. 4 ( Tempura Bento)

For the Sauce:

Soy sauce- About 4 Tbsp

Sake/ Japanese rice wine – 1 Tbsp

Mirin- 2 Tbsp

Sugar- 1 tsp

Procedure:

  1. In a small pan, put everything and simmer in low heat. Mix from time to time to avoid sugar from burning. When the consistency become a little bit thick, turn off the heat and set aside at room temperature. You can use a spoon test. Just deep a spoon and once it covers the spoon that’s the perfect consistency. It will still thickens once it cooled down.

For the Tempura I used:

Okura ( Trimmed and scored)

Eggplant

Pumpkin( You can use either fresh or frozen one! 😊 I used frozen since a whole pumpkin is too big for us. )

Maitake mushrooms

For the tempura flour:

Just bought a normal tempura flour we have at our local supermarket.

Just added some cold water in it and mix until smooth. Do not over mix the batter. Make sure your oil is hot enough. Or else it will stick into your frying pan. Do not over dip. The vegetables will be soft and too mushy.

For plating:

White rice is perfect for tempura bento 😊 I just sprinkles some Yukari Powder( Perilla Powder) Some nori sheets on top and some pickles on the side. Then put the fried tempura and drizzle some sauce on top! And also I added some of the carrot side dish I made from bento no. 1. I just kept it in the freezer! You can also sprinkle some chili powder to add some kick! Enjoy! 🥰

Bento no. 5 ( Soboro Bento )

For the Soboro:

Sauce:

Minced type of soy meat ( Boil and drain excess water)

Grated fresh ginger – about a tsp

Soy sauce- about 1 Tbsp

Brown sugar – 1 tsp

Mirin- 1 Tbsp

Sake/ Japanese rice wine- 1 Tbsp

Procedure:

  1. In a pan, saute the soy meat with olive oil, add the sauce. Continue sauteing until the soy meat absorbs the sauce. Just be careful burning the soy meat or else it would have a bitter taste. Set aside.

Scrambled Tofu

Silken Tofu

Turmeric powder

Soy sauce ( Optional)

Salt and pepper

Procedure:

  1. Put the silken tofu in a bowl. Using a whisk, crush the tofu until it looks like a scramble
  2. In a pan, put the tofu and saute until the water from the tofu evaporates.
  3. Season with salt and pepper. Add a pinch of turmeric powder and taste.
