This dish was inspired by a traditional Filipino coconut curry. My mom is a Filipina and I grew up in Manila. And one of my favorite food back then was the Filipino coconut curry. I just made a vegan version of it this time!💚It’s like a fusion of Filipino and Japanese cuisine. Love how the crispiness of Tofu Katsu plays with the creaminess of the coconut curry 😊✨ Hope you enjoy this recipe!
Ingredients: Coconut Curry
Potato- 2pieces(Large) cut into chunks
Carrots- 1piece (Large) cut into chunks
White Onions-3pieces
Ginger- 20g
Garlic- 5 cloves
Curry powder- 4tsp ( adjust according to preference)
Coconut Milk- 2can ( 800ml)
Shio Konbu/konbu salt (For the umami) it’s optional. If you do not have one, just adjust the taste with salt. No problem! 😊
Olive oil-for sautéing
Ground black pepper- to taste
Dried red chili- optional
Salt- to taste
Procedures:
- In a large pot, drizzle some olive oil. Add the black pepper and dried chili this time in medium heat. Saute the onion, garlic and ginger.
- Add the curry powder and continue sautéing.
- When the onion became translucent, add the carrots and potatoes saute for 2-3minutes
- Add the coconut milk
- Add some Shio Konbu, simmer in low heat until the vegetables are cooked!
Ingredients: Tofu Katsu
Firm Tofu- one block
Salt and pepper- to taste
Flour- enough for coating
Fresh Bread crumbs- enough for coating
Vegan Milk( I used soy milk for this one)
Procedures:
- Wrap the Tofu with clean towel. Put in a rack and put some weight on top. To help remove excess water from the tofu. Leave in the fridge overnight
- Portion the tofu and season with salt and pepper
- Coat the tofu evenly with the flour
- Dip and coat into your vegan milk
- Lastly, coat evenly with bread crumbs. ( I double coat mine for more crispiness 😊)) double coat means after coating with bread crumbs, you coat it again with vegan milk and again with bread crumbs!
- Deep fry in a vegetable oil on medium-low heat
